High-protein Oatmeal Pancakes

Turn your breakfast oatmeal into pancakes! These high-protein oatmeal pancakes are super easy to make and they are packed with protein! Just add all the ingredients into a blender and mix until smooth, cook and enjoy! These pancakes contain about 30 grams of protein. The cottage cheese in these adds a lot of protein. If you aren’t the biggest fan of cottage cheese, don’t worry cause you can’t even taste it in the ready pancakes. The pancakes are so fluffy and delicious! A fun way to upgrade your regular oatmeal breakfast bowl!

Ingredients:
- 1 cup (gluten-free) oats (2.4 dl)
- 2 teaspoons baking powder
- 4 eggs
- 1 cup high protein cottage cheese (200 g)
- 1 tablespoon maple syrup/honey
- 2 teaspoons vanilla extract
Instructions:
- Add all the ingredients into a blender and mix until smooth
- Cook on a non stick skillet for a few minutes on each side
- Serve with berries & maple syrup, for example!
