High-protein Tahini Noodle Salad Jars

Salad jars are my favorite way to meal prep salads! As the dressing goes at the bottom of the jars, the veggies on top stay fresh and crisp and won’t get soggy. This high-protein tahini noodle salad is easy to a make and so delicious! For a source of protein I used high-protein firm tofu, but you could also use chicken, for example. The tahini dressing is creamy and packed with flavor! Such a delicious lunch idea! Just pour the salad into a bowl before serving and toss!

Ingredients:

for the dressing:

  • 3 tablespoons tahini
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon garlic infused olive oil
  • 1 teaspoon sesame oil
  • juice of 1 lime
  • 1 teaspoon chili flakes
  • if you don’t have IBS, add 1/2 teaspoon garlic powder

for the salad:

  • 1 cup shelled edamame (about 150 g)
  • 2 grated carrots
  • 2 bell peppers, sliced
  • 1 cucumber, diced
  • 4 green onions, chopped
  • 4 servings of rice noodles

for the tofu:

  • 14 oz. high-protein tofu, cubed (400 g)
  • 3 tablespoons hot sauce
  • 2 tablespoons soy sauce
  • Pinch of pepper
Instructions:
  1. Mix all the ingredients together for the dressing
  2. Cook the tofu: Heat a nonstick pan over medium-high heat. Add the tofu and cook until lightly golden. Add hot sauce and soy sauce, and a pinch of pepper, and cook for another 1–2 minutes
  3. Cook the noodles according to the package instructions. Drain and rinse under cold water to stop them from cooking further and prevent them from becoming too sticky.
  4. Assemble the jars: Layer each jar in roughly this order: dressing, rice noodles, tofu, edamame, bell pepper, cucumber, carrots and green onions
