High-protein Cinnamon Roll Sheet Pan Pancakes

Ingredients:
For the pancake:
- 8 eggs
- 2 cups high protein Greek yogurt (480 ml)
- 2 teaspoons maple syrup
- 1 teaspoon vanilla paste/extract
- 1 cup (gluten-free) oat flour (240 ml)
- 1/2 cup almond flour (120 ml)
- 4 teaspoons baking powder
- 1 teaspoon ground cardamom
For the cinnamon swirl:
- 2 – 3 tablespoons melted butter
- ¼ cup brown sugar (4 tablespoons)
2 teaspoons ground cinnamon - 1 tablespoon (gluten-free) all purpose flour
Instructions:
- Mix the wet ingredients together
- Add the dry ingredients and stir
- Pour the batter into a baking pan lined with parchment paper
- Mix all the ingredients together for the cinnamon swirl mixture
- Pour the mixture into a piping bag or a small ziplock bag. If using a ziplock bag, cut a small hole into one of the corners to make a DIY piping bag.
- Make 4 swirls onto the pancake batter
- Bake at 200 Celsius / 390 Fahrenheit for about 20 minutes
- Store in an airtight container in the fridge and reheat in the microwave before serving
