Healthier Pistachio Ice Cream

Ingredients:
- 2 cups full fat Greek yogurt (480 ml / about 500 g)
- 1 cup pistachios, roasted and unsalted (about 170 g)(save some for topping)
- 3 – 4 tablespoons honey or maple syrup, to taste
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- Pinch of salt
Toppings:
- Crushed pistachios
Instructions:
- Add all the ingredients into a blender and mix until smooth
- Pour into a container. Top with crushed pistachios. Let set in the freezer for about 4 hours and enjoy!
