Viral Sweet Potato Bowls
These viral sweet potato bowls are a delicious high-protein dinner idea! The bowls have roasted sweet potatoes, taco-seasoned ground beef, cottage cheese, lettuce, avocado and hot honey! The roasted sweet potatoes and ground beef last in the fridge for about 3 days, so this meal is also great for meal prepping. Just reheat the sweet potatoes and ground beef on a pan or microwave before serving!

Ingredients:
for the sweet potatoes:
- 3 medium sized sweet potatoes, diced
- 2 tablespoons (garlic infused) olive oil
- 1 tablespoon paprika
- if you don’t have IBS, add 2 teaspoons garlic powder
- 2 teaspoons salt
- pinch of pepper
for the ground beef:
- 1.5 lb. lean ground beef (700 g)
- 3 tablespoons taco seasoning (or 1 tablespoon paprika, 2 teaspoons oregano, 2 teaspoons ground cumin, 2 teaspoons salt, pinch of chili flakes)
- 1/4 cup water (60 ml)
- 5 oz. lettuce (150 g)
- 1 1/2 cups cottage cheese (300 g)
- 1 1/2 avocados
Hot honey or honey + chili flakes
Instructions:
- Place the sweet potatoes onto a baking pan lined with parchment paper. Drizzle with olive oil and sprinkle paprika, salt, pepper (and garlic powder) and toss. Bake the sweet potatoes at 220 celsius / 425 Fahrenheit for about 25 minutes
- Meanwhile, cook the ground beef. Add the spices, water and stir
- Assemble the bowls, add: lettuce, sweet potatoes, ground beef and avocado. Drizzle hot honey or honey and chili flakes on top
- If you are meal prepping these, store the sweet potatoes and ground beef in airtight containers in the fridge and reheat in the microwave or on the pan
