High-protein Banana Bread Overnight Oats
Overnight oats are my favorite breakfast to meal prep because they take about 5 minutes to prep and you can make all kinds of yummy flavours. These high-protein banana bread overnight oats have about 28 grams of protein and 10 grams of fiber per serving. They are creamy and so delicious! I added some vanilla protein powder to these for extra protein but if you don’t have protein powder you can leave it out! In that case I would add a little less milk because protein powders tend to absorb liquid and also a little bit of a liquid sweetener, like maple syrup or honey, for sweetness because the protein powder also adds some sweetness.

Ingredients:
- 1/2 banana
- 1/2 cup rolled oats (120 ml)
- 1 tablespoon chia seeds
- 1/4 cup high-protein Greek yogurt (60 ml)
- 2/3 cup milk (160 ml)
- 2 tablespoons vanilla protein powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla paste/extract
topping examples:
- caramelised bananas
- or peanut butter & chocolate chips
Instructions:
- Mash the banana
- Mix all the ingredients together
- Let set in the fridge in an air-tight jar/container for at least two hours or overnight
- Top with caramelised banana or peanut butter and dark chocolate chips, for example!
- These last in the fridge for a few days
