Shrimp Tomato Parmesan Pasta
This pasta sauce is full of flavor. It tastes perfect with a bowl of spaghetti. The sauce is so delicious and creamy. This pasta will take your mind all the way to Italy.

- 2 tablespoons olive oil
- 3 1/2 dl shrimps 1 1/2 cups
- 3 1/2 dl fresh cherry tomatoes 1 1/2 cups
- 12 dl loosely packed fresh spinach 5 cups
- 1 tablespoon lemon juice
- 5 tablespoons grated Parmesan cheese or more, to taste
- pinch of salt
- pinch of balck pepper
- 1-2 teaspoons paprika
- pinch of chili powder to taste
- 1 dl lactose-free cooking cream or dairy-free sub 1/2 cup
- handful of spaghetti gluten-free
In a large pot cook the spaghetti in a boiling water according to package directions.
Chop cherry tomatoes. Wash spinach.
In a pan heat olive oil and add the tomatoes. Cook until tomatoes have softened a little.
Add the shrimps, lemon juice and the spices. Cook shrimps until they start to turn pink.
Add washed spinach and heavy cream and bring to boil. At this point you can already add some Parmesan to the sauce if you like.
When pasta is cooked add some olive oil to it.
Add the cooked pasta to the sauce.
Before serving sprinkle Parmesan cheese on top.
