Shrimp Tomato Parmesan Pasta

This pasta sauce is full of flavor. It tastes perfect with a bowl of spaghetti. The sauce is so delicious and creamy. This pasta will take your mind all the way to Italy.

Ingredients
  

  • 2 tablespoons olive oil
  • 3 1/2 dl shrimps 1 1/2 cups
  • 3 1/2 dl fresh cherry tomatoes 1 1/2 cups
  • 12 dl loosely packed fresh spinach 5 cups
  • 1 tablespoon lemon juice
  • 5 tablespoons grated Parmesan cheese or more, to taste
  • pinch of salt
  • pinch of balck pepper
  • 1-2 teaspoons paprika
  • pinch of chili powder to taste
  • 1 dl lactose-free cooking cream or dairy-free sub 1/2 cup
  • handful of spaghetti gluten-free

Instructions
 

  • In a large pot cook the spaghetti in a boiling water according to package directions.
  • Chop cherry tomatoes. Wash spinach.
  • In a pan heat olive oil and add the tomatoes. Cook until tomatoes have softened a little.
  • Add the shrimps, lemon juice and the spices. Cook shrimps until they start to turn pink.
  • Add washed spinach and heavy cream and bring to boil. At this point you can already add some Parmesan to the sauce if you like.
  • When pasta is cooked add some olive oil to it.
  • Add the cooked pasta to the sauce.
  • Before serving sprinkle Parmesan cheese on top.
  • Enjoy!
