Quick Bread
This Quick Bread recipe is so easy and simple. You´ll have a ready loaf in less than an hour. The recipe is gluten- and dairy-free.

- 3 large eggs
- 3 dl gluten-free flour mix 1 1/4 cup (you can use any gluten-free flours you like)
- 2 1/2 dl dark gluten-free flour mix 1 cup (you can use any gluten-free flours you like)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 1/2 dl almond milk 1 1/2 cup
- 6 tablespoons olive oil
Prepare a loaf pan with pan spray or line it with parchment paper.
Separate the eggs, yolks into a bowl and the whites into another. Whip the whites to medium peaks.
In a large bowl whisk together the flours, baking powder and salt.
Add milk and oil into the bowl with the yolks and mix well.
Pour the liquid ingredients into the bowl with the dry ingredients. Using a spoon, stir until combined. Fold in the egg whites.
Pour the batter into the prepared loaf pan and bake at 180 Celsius degrees (350 F) for 40-45 minutes, or until a toothpick inserted in the center comes out mostly clean.
