FODMAP friendly Pesto

I love Pesto with pasta, chicken, tomatoes, etc. Most store-bought Pestos contain garlic, which I can’t eat because of IBS. Garlic is high in FODMAPs, which I try to avoid in my diet. That´s why I have made my own FODMAP frienly Pesto recipe.

FODMAP friendly Pesto is just as delicious as regular pesto. This Pesto IBS sufferers can eat without feeling terrible afterwards. It is so great to be able to enjoy Pesto dishes and not get stomach ache after eating. That´s why, I really love this recipe!

Making Pesto is very easy. The recipe is simple and quick to make. You basically just mix all the ingredients together and that´s it. It´s also a fun recipe because you can make it your own by seasoning it the way you like it. You can add more Parmesan or lemon juice if you feel like it.

FODMAP friendly Pesto

FODMAP friendly Pesto is delicious and full of flavor. This is a Pesto recipe that IBS-sufferers can eat without getting stomach ache.

Ingredients
  

  • 1 big bunch of fresh basil leaves
  • 10 dl loosely packed fresh spinach 5 cups
  • 1 dl pine nuts 1/2 cup
  • 1,5 dl grated Parmesan cheese 3/4 cup (lactose free)
  • 1/2 dl olive oil 1/4 cup
  • 2 tablespoons lemon juice
  • pinch of salt to taste
  • pinch of black pepper

Instructions
 

  • Toast the pine nuts on a pan very lightly (don’t use any oil), just long enough for them to get a little bit color
  • Use a food processor or a mixer. First, add the basil leaves and washed spinach leaves and pulse/mix to paste.
  • Then add the pine nuts and pulse/mix again.
  • Add the olive oil, Parmesan cheese and lemon juice and pulse/mix again.
  • Have a taste and season the way you like it. You can add more Parmesan or lemon if you feel like it.
  • Enjoy, for example, with pasta!
