Roasted Carrots

Roasted Carrots are a great Thanksgiving side dish. They bring some freshness and sweetness to your holiday table.

This recipe is super simple but really delicious. The prep time is only five minutes and cook time 20 minutes. So, you can toss these in the oven while the Turkey is already resting. If doing also Roasted Brussels Sprouts, you can put them at the same time into your oven (convection oven).

Rosemary gives these carrots a beautiful flavor. They are super tender and tasty. TheseĀ Roasted Carrots are absolutely fabulous alongside Turkey or a roast.

I feel like the Thanksgiving dinner needs something fresh and healthy and these carrots are that to me. The recipe contains only a little olive oil, so itĀ“s pretty healthy.

Roasted Thanksgiving Carrots

Roasted Carrots are a perfect Thanksgiving side dish. They are super tender and tasty. These carrots bring some freshness and sweetness to your holiday table. They are also pretty healthy!

Ingredients
  

  • 6-8 carrots depends on the size of the carrots
  • 1/4 cup olive oil 0,6 dl
  • 1-2 teaspoons rosemary to taste
  • 1 teaspoon sage
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt or more/less, to taste

Instructions
 

  • Peel or wash the carrots.
  • Cut the carrots in thirds crosswise. Then cut each piece lengthwise into halves or fourths (depends on the width of the carrots).
  • Put the carrots and all other ingredients into a bowl and mix.
  • Place carrots on a baking pan lined with parchment paper.
  • Cook at 440 degrees (225 in Celsius) for about 20 minutes.
  • Serve with fresh parsley if you like!:)
