Buckwheat Flaxseed Rolls
Homemade bread is the best! The smell of freshly baked bread is just so good. I love it! There isn’t many rolls sold in the grocery store that I could eat. The gluten-free rolls available are usually made of rice flour and that often gives me stomach ache. I like to use buckwheat flour in my recipes, so I wanted to make rolls using that flour. That’s how I came up with this Buckwheat Flaxseed Rolls recipe.
Where do I get my gluten-free flours from?
In all of my recipes I use flours from Virtasalmen Viljatuote. They make the best gluten-free flours. I used their buckwheat flour, buckwheat flakes and milled flaxseeds in this recipe. You could use any gluten-free flours you like in this recipe and you can replace the buckwheat flakes with oats. I used psyllium in these rolls. Most people with IBS should tolerate psyllium. There isn´t much of it in this recipe, so it should be fine with IBS sufferers. At least, I didn´t get any symptoms after eating these buns and believe me, I ate many of them.
Fluffiest gluten-free rolls
These rolls are so fluffy that no one will believe they are gluten-free. They also taste super delicious. These buns are not only gluten-free, they are also dairy-free. You can eat these for breakfast or with peanut butter for snack or you could also use these as hamburger buns. I tried that and they worked perfectly! It´s so fun to make hamburgers from scratch. Homemade buns taste so much better than store bought.
These rolls are super easy to make. You don’t even have to get your hands dirty with the doughXD You can just scoop the dough with a spoon to a baking pan. So easy!

Buckwheat Flaxseed Rolls
Ingredients
- 2 cups water 5 dl
- 1 package dry yeast (11 grams)
- 1/4 cup olive oil 1/2 dl
- 1 tablespoon maple syrup
- 1 1/2 - 2 teaspoons salt
- 1 tablespoon psyllium
- 1 cup buckwheat flakes 2 1/2 dl
- 1 cup buckwheat flour 2 1/2 dl
- 1/2 - 3/4 cup almond flour 1-2 dl
- 1/4 cup milled flaxseeds 1/2 dl
Topping
- 2 tablespoons sesame seeds
Instructions
- Heat the water in the microwave until its about 42 degrees in Celsius (check the yeast package which temperature it recommends)
- Add the yeast in the warm water and stir until combined.
- Add the olive oil, maple syrup and salt and stir. Mix in the psyllium. Add the buckwheat flakes and stir. Let sit for five minutes.
- Add flours and mix with a hand mixer for about five minutes.
- Scoop about 2-4 tablespoons of the dough per roll on a baking pan lined with parchment paper (you can decide yourself how big rolls you want to make). Sprinkle some sesame seeds on top.
- Let the rolls rise uncovered for 20-30 minutes.
- Cook at 225 Celsius degrees (440 in Fahrenheit) for about 15 minutes.
